Pakhtuni Daal

Pakhtuni Daal

 
Ingredients

Whole Black Masoor Daal 200 gms
Salt 1½ tsp
Ginger Garlic 1 tbsp
Chili Powder 1½ tsp
Garam Masala 1 tsp
Tomato Puree ½ cup
Cream ½ cup
Butter 2 tbsp
Coriander Leaves (chopped)2 tbsp
Green Chilies (chopped)2
Ginger (sliced) 2 tbsp

METHOD

Boil black masoor daal in 2 cups water till tender. Heat ¼ cup oil and 2 ounce butter, add tomato puree, salt, chili powder, cook for 5 mins, add this to the daal with cream, mix well and remove. Garnish with ginger sliced, coriander leaves and green chilies.

Plain Flour ½ kg
Egg White 1
Nutmeg (grinded) ¼ tsp
Green Cardamom (grinded) ½ tsp
Baking Powder ½ tsp
Milk 1 cup
Saffron 1 pinch

Ingredients For Filling

Corn Flour 4 tbsp
Ghee 4 to 5 tbsp
METHOD

In a bowl add flour, egg white, nutmeg, choti elaichi, baking powder and 2 tsp heaped solid ghee, mix well till properly mixed, cook milk with ½ cup sugar and pinch of saffron till sugar melts, cool and knead the dough with this. Leave it for 2 hours covered, make into 10 balls, roll each ball into dinner plate size, put on top of each other spreading lavishly with ghee and sprinkle lavishly with dry corn flour. Do this till all five have been kept on top of each other, spread ghee and corn flour on top layer too. Roll into a swiss roll then cut with sharp knife cut into thin peras, and slightly roll into rounds or longish. Deep fry in medium oil, not very hot, keep splashing oil on top of the purees, fry till golden brown.

Flour ½ kg
Salt ½ tsp
Ghee 2 tbsp
Sugar 1 tbsp

METHOD

Mix all together and knead into a soft dough make into balls, brush with oil, leave covered for few mins. Heat oil make into parathas size of a quarter plate and deep fry. Serve with Tawa Qeema.

Chili Powder ½ tsp

METHOD

Marinate chicken with yogurt, tomato puree, ginger garlic, salt, turmeric, chili powder, coriander powder, black pepper, all spice, orange color, zafrani kewra, chili garlic sauce, sweet chili sauce and leave it for 30 mins. Heat ¼ cup oil, fry chopped onion till light golden. Add marinated chicken, and cook till done. Lastly add chopped coriander and green chilies. Serve with saffron rice.

Ingredients for Saffron Rice

Rice boiled ½ kg with 1 tbsp salt and ½ tsp turmeric

METHOD

Boil rice with salt and turmeric until done, drain. Heat oil, add boiled rice, and leave it on dum. Lastly add zafrani kewra, mix well. Serve with tandoori chicken masala.

METHOD

In a bowl mix all the dry masala with yogurt, ginger garlic paste and marinate your chicken in this for 2 hours. Heat ¼ cup oil, fry blended onion, fry till light golden, add marinated chicken, fry well, add in all the marination with ½ cup water, cover and cook till done. Serve garnished with coriander and green chilies.

Remove corners of bread slices, soak bread slices in little water for 5 seconds, and squeeze to remove water. Heat 1 tbsp oil, add shredded chicken , mashed potatoes, all the spices, mix filling well, cut bread into circles, add filling in center cover with another slice, seal well with fork, dip in beaten egg and deep fry.

METHOD FOR LEMON SYRUP

Mix both together in a sauce pan, cook on medium flame stirring constantly for 5 mins until sugar dissolved and slightly thick syrup is formed.

METHOD FOR CAKE

Mix flour sugar baking powder and salt, beat eggs, evaporated milk, oil and lemon peel together in a bowl, pour egg mixture into flour mixture, stir until just combined. Pour into greased and flour loafed pan, bake for 1 hour, remove, poke numerous holes in the hot cake, slowly drizzle with hot lemon syrup, cool on wire rack for 15 mins, remove cake to cool completely.

METHOD

Pre-heat oven 180 degrees, grease and flour 8 inch square pan. Combine flour baking powder, and salt. Mix well, griped orange peel about 2 tsp. Beat shortening and 1 cup sugar until fluffy. Add egg beat until well blended, fold in flour mixture alternately with milk, beating well, stir in orange peel, pour into prepared pan, sprinkle with almonds, bake for 40 mins, sprinkle with remaining 2 tbsp sugar, drizzle evenly with orange juice. Cool 10 mins in a pan on wire rack. Cool and serve.

METHOD

Pre heat 180 degrees, line muffin pan with baking cups, mix flour and salt keep aside, heat butter and chocolate in medium pan over very low heat, stirring frequently until melted remove from heat. Gradually mix in sugar, add eggs 1 at a time, mixing well after each addition. Stir in vanilla, fold in flour mixture lightly, and fill muffin cups, place 1 chocolate in center of each cup. Bake for 18 mins, cool 10 mins in pans on wire rack, cool completely.

In a blender put brown onion, cashew nuts, coconut milk, and blend well. Marinate chicken with salt, chili powder, ginger garlic paste, lemon juice for 30 mins, add in yogurt. Now add chicken in a pan and cook on high flame till water dries. Heat oil, add ginger garlic paste, tomatoes, coriander powder, all spice, chaat masala and blended onion, cashew paste, cook till oil separates, now add chicken and half cup of water, cook for 10 mins, garnish with green chilies, serve with nan.

METHOD

Pre-heat oven to 180 degrees, grease and flour 18 mini bandit cups, mix flour, baking powder, salt and baking soda, keep aside. Beat butter with brown sugar, fine sugar and vanilla until fluffy. Add in eggs one at a time, until well blended, add flour mixture alternately with milk, beginning and ending with flour. Beat on low speed fold in half cup chocolate chips, fill bandit cups, and bake for 18 mins, remove, cool for 5 mins and remove on wire rack. Mix remaining half cup chocolate chips and 3 tbsp milk in a bowl microwave on high for 30 seconds. Mix again microwave for 15 seconds. Drizzle evenly over coffee cakes.

Mix boiled and mashed potatoes with peace, grated carrots, turmeric, chili powder, roasted and crushed cumin, salt, mix well. Make into kofta. In a bowl mix remaining corn flour, 2 tbsp flour and coat the koftas, and deep fry koftas and keep aside.

METHOD FOR GRAVY

Heat oil add blended tomatoes, brown onion, garlic paste, all the dry masala with ½ cup water, and fry well till gravy thick, add fried koftas, take it out in a serving dish, garnish with coriander leaves, and serve immediately.

Boil all the daals in 3 cups of water till tender, slightly mash, heat ¼ cup ghee in a pan fry onion until brown, add in salt, chili powder, turmeric, coriander powder, all the seeds, and fry well. Add boiled and mashed daal, cook for 15 mins. Lastly heat ¼ cup ghee and give baghaar with batten red chilies, crushed garlic, curry leaves and cumin seeds, and put on top of the daal.

Mince ½ kg

METHOD

Marinate coarsely chopped qeema with yogurt, raw papaya, ginger garlic paste, salt, leave it for 2 hours, heat tawa, add ½ cup oil with marinated mince, fry well till water dries, add coarsely chopperised green chilies, coarsely chopped cumin and coriander, crushed red pepper, crushed black pepper, all spice, add in chopped onion, chopped coriander leaves and fry well. Lastly add 4 ounce butter and remove.

Ingredients:

  • Potatoes 1/2 kg
  • Rice flour as required
  • Corn flour as required
  • Salt to taste
  • Chaat masala as required
  • BBQ masala as required
  • Garlic sauce as required
  • Oil as required

For Garlic Sauce:

  • Garlic cloves 8-10
  • White pepper 1 tbsp
  • Lemon juice 2 tbsp
  • Cream 1/2 cup

For BBQ Masala:

  • Cloves 2
  • Big cardamom 2
  • Green cardamom 2
  • Cinnamon 2
  • Mace 2 tsp
  • Nutmeg 2 tsp
  • Black pepper 2 tbsp
  • Fennel seeds 4 tbsp
  • Roasted cumin 6 tbsp
  • Ginger powder 4 tbsp

Direction:

  1. Wash potatoes, peel it and cut in finger shape.
  2. Now boil water in saucepan, put potatoes and boil it for 3-4 minutes.
  3. Then take it out, strain it, put in cold water and strain it after 1 minute.
  4. Then put potatoes, salt, corn flour, rice flour and black pepper in bowl, mix it nicely and leave for 30 minutes.
  5. Then heat oil in wok and deep fry potatoes until golden brown.
  6. Then take out in plate, sprinkle chaat masala & bbq masala, toss it nicely, spread garlic sauce & tomato ketchup on it and serve hot.
  7. For garlic sauce: Put all ingredients in blender and blend it nicely.
  8. Then store in squeeze bottle.
  9. For bbq masala: Put all ingredients in grinder and grinder it nicely.
  10. Then store in jar.

 Coffee Oreo Mousse is mouth-watering dessert. You must try this dessert at home and surprise your family.

Ingredients:

  • Unflavored gelatin 4 tsp
  • Cocoa powder 4 tbsp + 1tbsp (for intense chocolate flavor)
  • Heavy cream 3 cups
  • Coffee 1 cup
  • Vanilla extract 2 tsp
  • Oreo cookies crushed 600 gm
  • Whipped cream 200 ml
  • Cold water 4 tbsp
  • Boiled water 1/2 cup
  • Sugar 1 cup
  • Water little

Direction:

  1. Add whipped cream in large metal mixing bowl.
  2. Then whip with hand mixer on high speed until cream thickens to stiff peaks.
  3. Then cover with plastic wrap and refrigerate it.
  4. Then put cold water in medium bowl and add gelatin.
  5. Then stir it and let stand it for 1 minute to soften.
  6. Then add boiled water, stir it until gelatin is completely dissolved and cool it.
  7. Then put sugar and cocoa powder in large mixing bowl and stir it whisk.
  8. Then add heavy cream and beat with hand mixer on medium-high speed until stiff peaks form.
  9. Then mix coffee with water in bowl nicely until syrup.
  10. Then add coffee syrup, vanilla extract and gelatin and beat continuously with hand mixer on high speed until it is nicely blended and soft peaks form.
  11. Leave it for 5 minutes to thicken.
  12. Then put 1 tbsp crushed cookies in serving glasses followed by 1 tbsp of mousse.
  13. Then again put 1 tbsp crushed cookies in serving bowl followed by 1 tbsp of mousse.
  14. Repeat it until serving glasses are full.
  15. Then chill it in refrigerator for 2 hours.
  16. Then fill piping bag with whipped cream fitted with star nozzle.
  17. Then take out mousse from refrigerator, pipe whipped cream on top and sprinkle crushed cookies.
  18. Then chill it more in refrigerator for 1 hour or until set.
  19. Then take out from refrigerator and serve chilled.

Ingredients:

For Dough:

  • All-purpose flour 2 cups
  • Instant yeast 1/2 tbsp
  • Baking powder 1/4 tsp
  • Sugar 1/2 tsp
  • Salt 1/2 tsp
  • Dry milk powder 1 tbsp
  • Egg 1
  • Oil 2 tbsp

For Chicken Filling:

  • Chicken boiled & shredded 1 cup
  • Onion chopped 1 small
  • Green chilies chopped 2-3
  • Coriander leaves chopped 2 tbsp
  • Salt 1 tsp
  • Black pepper 1 tsp
  • Garam masala powder 1/2 tsp
  • Flour 2 tbsp
  • Butter 2 tbsp
  • Egg beaten 1
  • Sesame seeds as required

Direction:

  1. For chicken filling: Heat butter in pan.
  2. Then add onion and sauté it.
  3. Now add flour, salt, black pepper, garam masala powder and milk and cook until sauce is thick.
  4. Then add chicken, green chilies and coriander leaves, mix it nicely, remove from stove and cool it completely.
  5. For dough: Put all ingredients in bowl and mix it nicely.
  6. Then knead soft dough with lukewarm water and leave it in warm place until double.
  7. Now roll dough in rectangle shape and keep chicken filling in center of the dough.
  8. Then make slits (cuts) on both of longer sides.

  • Soya sauce 3 tbsp

For Tartar Sauce:

  • Mayonnaise 1/2 cup

  • Salt 1/4 tsp
  • White pepper 1/4 tsp
  • Onion pickle chopped 1 tbsp
  • Parsley chopped 1 tsp
  • Egg white 1 boiled

Direction:

  1. For marination: Put all ingredients in bowl and mix it nicely.
  2. Then marinate chicken or beef fillet with this mixture for 45 to 60 minutes.
  3. Then heat grill pan and put little oil.
  4. Then grill chicken or beef fillet on grill pan for 5 minutes on both sides.
  5. Then cut burger buns into halves.
  6. Then spread tartar sauce on one slice of bun and tomato ketchup on second slice of bun.
  7. Then keep salad leaves, chicken or beef fillet & cucumber slice on one slice of first bun, cover with one slice of second bun, keep cheese slice, chicken or beef fillet & tomato slice and cover with second slice of first bun.

Method:

  1. For chicken fajita: Put chicken stripes, ginger paste, garlic paste, crushed red chilies, cumin powder, salt, black pepper powder and lemon juice in bowl and marinate chicken nicely for 30 minutes.
  2. Now heat oil in pan, put chicken and cook until chicken tender.
  3. Then spread tomato ketchup or chili garlic sauce on one bread slice and mayonnaise on second bread slice.
  4. Then keep salad leaves, cucumber slice, shredded chicken on one bread slice, cover with other bread slice, then keep salad leaves, tomato slice and cheese slice and cover with second bread slice.
  5. Then cut sandwich in triangle shape, keep on serving plate and serve with tomato ketchup, French fries and coleslaw salad.

For Cake:

  • Unsalted butter 125 gm
  • Cream cheese 800 gm
  • Sour cream 2 cups
  • Sugar 1-1/2 cups
  • Eggs 6
  • Corn flour 2 tbsp
  • Vanilla essence 1 tbsp
  • Lemon zest 1 tsp
  • Lemon juice 1 tsp

For Sauce:

  • Blueberries 1 cup
  • Sugar 1 tbsp
  • Lemon juice 1 tsp

Direction:

  1. Preheat oven on 150 degrees C on gas mark 2.
  2. Grease 10 inch spring-form cake tin, keep baking paper, grease it again nicely and cover tin with foil on sides and bottom.
  3. Now keep paper towel on baking tray and keep baking tin.
  4. Now put cream cheese and butter in large bowl and beat with beater nicely until combined.
  5. Then add sour cream, sugar, corn flour, vanilla essence, lemon zest and lemon juice and beat it nicely until combined.
  6. Now add eggs one at a time beating slowly until all are combined.
  7. Then pour batter in tin and put hot water in baking tray (1 to 2 inch).
  8. Then bake in preheated oven for 135 minutes (2 hours and 15 minutes) or until toothpick inserted comes out clean.
  9. Then turn off oven, open its door and cool it for 2 hours in oven.
  10. Then take out from oven and cool for 1 hour on wire rack.
  11. Then refrigerate it overnight or for 6 to 7 hours.
  12. For sauce: Put blueberries, sugar and lemon juice in pot, cook and mash it on medium-high flame until thick.
  13. Then cool it.
  14. Then dust powder sugar on cake.
  15. Now cut cheesecake into slices and serving in serving plate with blueberry sauce.

Direction:

  1. Use ice cream scoop to form balls of ice cream, then keep on tray and freeze it until firm for about 1 hour.
  2. Then remove edges of bread slices and flat it with rolling pin.
  3. Now take out ice cream, cover it with bread slices and freeze it again until firm for about 3 to 4 hours.
  4. Then mix cinnamon powder and sugar in bowl nicely.
  5. Then heat oil in wok on 190 degrees C and deep fry ice cream balls for 10 to 15 seconds or until golden.
  6. Then take it out and keep on paper towels.
  7. Then roll balls in cinnamon and sugar mixture.
  8. Then top with chocolates sauce, garnish with chopped nuts and served immediately
